I handed them a bunch of expensive knives ($200-500) and they just put them through power grinders to sharpen them up which removed a lot of the metal, re-profiled the edge, and probably damaged the heat treat. If your knife gets too hot it damages the heat treat. Here is the work on two of the knives I dropped off. 



Neither should have gone through a power grinder. I spoke with the woman before dropping them off and was assured the edge would not be re-profiled. These knives should have been given more care than they were.

I trusted him to sharpen two very... read more old Japanese ceramic knives and he afterwards restored a Wüsthof that was pretty damaged for me that became my new favorite work tool. So if you are looking someone trustworthy, great at his craft and nice person to work with, Junhao is your guy  PS A plus is that he goes to different farmers markets and I discovered the wonderful Mariners Farmers Market because of him
